Chocolate Chip Bundt Cake



Bundt cakes are one of my go to desserts.  They are easy and perfect for making a day ahead.  Yes, there are all kinds of bundt cake recipes floating around cyberspace with pudding and sour cream.  Most seem to be with a chocolate cake mix and chocolate pudding. Don’t get me wrong, I love chocolate cake and make it regularly as well.  This is a twist that we came up with to make things a little different.  Using a white cake mix and white chocolate pudding makes this cake delicious but a little less rich than using all chocolate flavors.  It is super moist and tasty.  The cake can hold its own, don’t get me wrong, but when you add the ganache on top it is FABULOUS!!!!  Seriously, the picture has me drooling for a slice right now.

If you are really in the mood to change it up even more, you can substitute frozen blueberries for the chocolate chips.  It makes a delicious blueberry cake.  Use a cream cheese frosting on top and dig in.

Chocolate Chip Bundt Cake

Ingredients:

1 white cake mix
2 small boxes white chocolate pudding
1 c. sour cream
½ c. oil
½ c. warm water
4 eggs
½ c. chocolate chips

Directions:

Preheat oven to 350 and prepare bundt pan with baking spray.

Using an electric mixer, mix together all ingredients except chocolate chips on medium speed, until there are no lumps in the mixture.  Stir in chocolate chips just until they are incorporated throughout.

Pour into prepared bundt pan and bake 45-60 minutes.  Let cool in bundt pan for at least 1 hour and then dump out onto a wire rack to continue cooling.

Once cake has cooled, place on your serving plate and prepare ganache.

Chocolate Ganache

Ingredients:

1/3 cup heavy cream
1 tablespoon butter
1 tablespoon sugar
3 oz semi-sweet chocolate (in pieces)

Directions:

Place chocolate in mixing bowl.  Heat cream, butter and sugar in a small saucepan over medium-high heat.  Bring to a boil.  (Watch out, it boils over quickly).  Pour the boiling cream over chocolate.  Allow to stand 3-4 minutes, until chocolate melts.  Stir until smooth.

Immediately spoon over the top of the cake.
