Turkey Panini with Pesto Mayo

I just returned home (Denver) late last night from spending the weekend in Dallas.  My mom and I were able to spend Saturday afternoon at the Williams-Sonoma in Plano showing off the Breville Panini Press that we are giving away.  We had a blast!  We got to meet so many different people and tell them all about the wonderful things that can be done with the Breville Panini Press.  We were able to share our Fajita-Style QuesadillasRestruant-Style Salsa and Grilled Pineapple Sundae with Brown Sugar Lime Sauce.  YUMMY….my mouth is watering just thinking about it.   It was a quick trip but it was so much fun.  I love getting to meet new people and talk to them about one of my most favorite topics-food!!!

And since we are giving away an amazing panini press in just a short week, we just have to share some of our favorite panini recipes.  This is probably my most favorite panini.  I eat it often.  It is so simple and do not forget the Pesto-Mayo.  It is what makes this sandwich.

Turkey Panini with Pesto Mayo

Ingredients:

Thick Crusty Bread
Sliced Deli Turkey
Roasted Red Peppers, drained and sliced
Swiss Cheese, sliced
Pesto
Mayonnaise

Directions:

Preheat Panini Press.  Slice bread so that it is about 1/2 to 1 inch thick.  Mix together equal parts of the pesto and the mayonnaise stir until combined.  {I use about a tablespoon of each for 1 panini.  I like a lot of the Pesto Mayo.}

Spread the Pesto Mayo on one side of each slice of bread.  Layer Turkey, Swiss Cheese and Roasted Red Peppers onto one of the bread slices.  Place the other slice of bread on top (Pesto Mayo facing in) and place sandwich in the panini press.  Cook until the cheese is melted and bread is golden brown.
