Crunchy Roasted Chickpeas


I am always on the lookout for inexpensive and healthy snack options for my kids and myself.  I came across these roasted chickpeas in a Martha Stewart Magazine and thought we would give them a try.  My kids were a little stand-offish at first, but they became good friends after a simple introduction.  My kids think they are eating nuts for lack of a better way to explain it.

Chickpeas are very inexpensive and are full of protein, fiber and iron.  But they make an irresistible snack.  Try them sprinkled in a salad.

As far as the seasonings go, experiment.  My family likes salt and cinnamon.  Try using whatever flavors you like.  I would love to hear about them.  We are continuing to experiment with our flavors as well.

Crunchy Roasted Chickpeas

Ingredients:

2 cans chickpeas
3 Tbls. extra-virgin olive oil
coarse salt
1 1/2 tsp. cinnamon, paprika, pepper, etc… (optional)

Directions:

Preheat oven to 400.  Drain and rinse the chickpeas and scatter on a paper towel-lined rimmed baking sheet.  Let stand 15 minutes.  Remove the paper towels and toss chickpeas with olive oil.

Roast until crisp and golden, about 45 minutes, stirring occasionally.  Toss with coarse salt and 1 1/2 tsp of desired seasoning, if desired and serve.  Store cooled chickpeas in an airtight container up to 1 week.

  12. This is such a good idea! Tasty, healthy and easy. I did the first batch with cinnamon and salt like you, and the second with smokey paprika and pepper – both were sooo yummy! Will definitely be a constant on my desk while studying.

  15. Found these on Pinterest. I love chick peas but didn’t know how to eat them in their full glory. I just made some, but haven’t eaten them yet because they are still hot. But it made my whole house smell phenomenal! Almost like movie theater popcorn!

  16. I have been making these for a while! Love to use the same seasoning as my kale chips, which is nutritional yeast (powder sold at health food stores, imparts a cheesy taste), smoked paprika (a BBQ smokey flavor), cumin, and a little chili powder (ancho chili powder is my favorite), along with a bit of sea salt and some olive oil. 🙂

  17. Can the seasoning be applied and then you backe the chickpeas, or will the seasoning make them taste burnt?

  23. When I do mine I let sit out overnight to dry out then bake at 200 for an hour or so.i also put garlic powder and parsley on mine…very yummy! We use it as a movie snack!

  27. I just made these using chick peas AND edamame and it turned out dee-double-licious! I seasoned with 1 1/2 tsp seasoning mix of smoked paprika, cumin and chili powder like Heidi recommended and I can’t stop eating them!

  29. Had 2 cans of chick peas in the cabinet, so I made these using Jane’s crazy mixed up salt for both salt and seasoning. They taste fantastic!!! I’m sending eveyone at my gym to this recipe!

  30. I have these in the oven right now and they have under 10 min. left. They did not puff up and get big like yours. Did I do something wrong?

  31. Mine did not puff up-they actually got smaller. So no worries!! Hope they turn out for you.

  45. just tried these. They are Great. I tried them with Dill and they are great. I think next time I will try nutritional yeast and garlic. Yummm

  46. These are delicious! I used popcorn seasoning and made a different flavor for my husband and I.

  47. What’s the texture like? Are they hard all the way through, like nuts?

  48. I can’t get the flavoring to really stick to them after they are cooked. Can you put cinnamon on them before, or will the cinnamon burn in the 40 minutes?
