Coconut Chicken Tenders



Adults and Kids will come together for dinner and can both enjoy Coconut Chicken. It is a kid friendly dinner, but the flavors are great. The chicken is dipped in sweetened condensed milk before the coconut, which makes the chicken not only sweet, but also stays moist and tender. I decided I didn’t want to clean splattered oil off the entire kitchen, so I wanted to bake the chicken rather than fry it. Cooking it all at once in the oven is not only simple but also makes for an easier cleanup.

Coconut Chicken Tenders

Ingredients:

1.5 pounds chicken tenders (10-12 tenders)
1 egg
half can of sweetened condensed milk
1 1/4 cups coconut
1 cup bread crumbs or panko
1/2 cup melted butter

Directions:

Preheat oven to 400 and line a baking sheet with parchment paper. {This will help save a lot of time with clean up.}

In a shallow dish beat together the egg and sweetened condensed milk. In a separate dish combine the coconut and bread crumbs.

Dip the chicken tenders in the egg/milk mixture and then into the coconut. Be sure to evenly coat both sides of the chicken. Place on prepared baking sheet. Evenly pour melted butter over the top of the chicken tenders. {This will help brown and crisp the outsides. We are not frying them!}

Bake chicken for about 15 minutes, remove from the oven and turn chicken over. Bake an additional 15-20 minutes. If you like a crispier outside, place chicken under the broiler for a couple of minutes. Be sure to watch it closely.

Serve immediately!
