Bob Harper’s Skinny Balsamic Vinaigrette


We love salads in the summer.  Add a little chicken or shrimp and you have a wonderful cool and fresh dinner.  If you want to lighten up your summer salads even more, this no-fat, low-carb balsamic vinaigrette is really good.  Of course Bob Harper would know a thing or two about how to lighten things up!!  (Bob is the supertrainer on Biggest Loser.)  I was a little skeptical at first – what no added sugar??  But it really is good, so I thought I would pass it on.

I will say a word or two about balsamic vinegar.  First, they are not all created equal.  In my opinion, it’s worth spending a little extra to get a really good one.  They last a long time and make such a difference in recipes.  Second, experiment with different flavors.  We love raspberry, but my favorite right now is a Fig Balsamic Vinegar (which is really good in this dressing).

Try it on your favorite salad-  you have to love a dressing that tastes good and is no-fat as well as low-carb.  Now you can enjoy those salads without the guilt {well, except for the croutons . . . }

 

Bob Harper’s Skinny Balsamic Vinaigrette

1 tablespoon balsamic vinegar
1 teaspoon Dijon mustard
2 teaspoons fresh lemon juice

Whisk together and serve over salad or grilled vegetables.

 

Note:  Obviously this makes just a few servings, so double or triple it to use all week long- it keeps in the frig.
