Whole Wheat Buttermilk Pancakes with Wheat Germ

 

It’s Monday morning, what did you have for breakfast today?  I wish I could say I had these pancakes, but unfortunately this picture was taken several weeks ago – maybe tomorrow . . .

When the weather starts to get colder, a warm breakfast is always a welcome beginning, and hot pancakes with butter and syrup are a classic.  Of course you can always step them up even more with Cinnamon Apples or Fresh Blueberry Sauce.

A few weeks ago we told you about the amazing nutritional value of Wheat Germ and shared the recipe for  Low-fat Blueberry Granola.  As promised, here’s another delicious and simple way to give your family that added nutrition!

 

Whole Wheat Buttermilk Pancakes with Wheat Germ

Ingredients:

2 eggs, lightly beaten
1/4 cup canola oil
2 cups buttermilk
1/2 cup wheat germ
1 1/2 cups whole wheat flour
2 teaspoons baking powder
1/2 teaspoon salt

Directions:

Mix the wheat germ, flour, baking soda and salt until well blended.  Set aside.  Stir together the eggs, oil and buttermilk.  Add the dry ingredients to the eggs and stir until completely mixed.

Heat a lightly oiled griddle over medium-high heat.  Pour  the batter on the griddle and brown on both sides.
