Toffee Fondue

It’s the most wonderful time of the year!  It truly is, but I am reminded this morning that it is the sickest time of year too.  I love Christmas time and all that it means, but it does seem that my kids are sick more too.  I am reminded of this as I type with a 3-year-old curled up on my lap.  Her belly doesn’t feel good.  So it begins…

Traditionally when people think of fondue they think of 2 kinds; cheese and chocolate.  But there are so many other options.  Toffee fondue is a get a spoon to scrape the sides of the pan kind of good.  {Who does that?}  I like to think of Toffee Fondue as a “winter” fondue.  We are not going to use summer fruit, of course you can if you choose, but you won’t need to.  Apples and pears both taste great in here; both of which are widely available all year round.

Toffee Fondue 

Ingredients:

6 Tbls. butter
1 cup brown sugar
2/3 cup corn syrup
1 (14 oz) sweetened condensed milk
1/2 cup toffee bits
1 tsp. vanilla

apples
pears
pretzel rods
marshmallows
chocolate bars
shortbread cookies
and other dipping items…

Directions:

Place the butter, brown sugar, corn syrup and sweetened condensed milk in a medium saucepan over medium heat.  Stir frequently with a whisk until smooth.  Allow the mixture to come just to a boil, stirring frequently.  Once the mixture begins to boil turn off the heat and add the vanilla and toffee bits.

Keep warm and serve with pears, apples, pretzel rods, shortbread cookies, chocolate bars, marshmallows, etc…
