Waffle Cookies

With all the holiday baking that needs to get done, it’s nice to have an option that does not need to compete for precious oven space. These cookies, as I am sure you may guess, are cooked in a waffle iron.  And let me tell you, it will be love at first bite.  These are so good, it is hard to keep any of them from entering my mouth as soon as they come off the iron.

Waffle Cookies

Ingredients:

2/3 cup flour
1/2 tsp. baking powder
1/2 tsp. ground cinnamon
1/8 tsp. salt
1/4 cup butter, softened, plus more for the iron
1/4 cup granulated sugar
1 large egg
1 TBLS. maple syrup
powdered sugar for dusting

Directions:

Preheat a waffle iron and brush it with butter.

Combine the flour, baking powder, cinnamon and salt in a medium bowl; set aside.

Beat the butter and sugar until light and fluffy. Add the egg and syrup and beat until blended.

Gradually add the flour mixture, stirring until just mixed.

**(If using a standard waffle iron, drop the dough by the 1 1/2 rounded teaspoon; if using a Belgian iron, drop the dough by 1 1/2 rounded Tablespoon.)**

Drop mounds of dough into the hot waffle iron 2 inches apart. Close the lid and cook for 1 1/2 to 2 minutes, until firm. Lift the cookies with a fork and set them on a rack to cool. Dust with powdered sugar.
