Sausage and Cheese Muffins

Good Morning-yes I know you may not be reading this early in the morning, but hey its about breakfast this morning. If you have followed this blog for any length of time you know I am always looking for a good breakfast for my kids that is able to come together quickly since mornings at my house are CRAZY! {I like to pretend that mornings are as crazy for everyone else as they are for me, so feel free to confirm that thought.}

Back to the muffins. Seriously they are so simple. My 8 year-old practically made these by herself. I cooked the sausage but that was about it. {It is not child labor, I promise. She wanted to do it.} Now these freeze really well too. So, same daughter gets up, grabs one out of the freezer, pops it in the microwave for about a minute and has just made herself a warm and delicious breakfast that will fill her up way better than any sugar cereal could do. Now that is what we are talking about! My life just got that much easier, one kid feeding herself is so great, because seriously why is it every morning everyone wants something different for breakfast.

Sausage and Cheese Muffins

Ingredients:

2 cups flour

1 Tbls. baking powder

1/2 tsp. salt

1/4 tsp black pepper

1 cup milk

1/3 cup oil

2 eggs

1 cup cooked and crumbled sausage (use your favorite, I use a maple flavored sausage-YUM)

1 1/2 cups shredded cheddar cheese (you could totally switch this up if you feel the need)

Directions:

Preheat oven to 375 and spray 12 muffin cups with cooking spray.

In a large bowl, combine the flour, baking powder, salt and pepper. Stir until blended and make a well in the center.

In a smaller bowl, combine the milk and oil. Add the eggs and beat well with a whisk. Pour the liquid ingredients into the dry ingredients and stir with a fork just until mixed. Use a spatula to scrape down the sides of the bowl and gently fold in the sausage and cheese. Do not over mix.

Divide batter among the prepared muffin cups.

Bake muffins 20-22 minutes, or until lightly browned on top. Cool muffins in pan about 5 minutes and then finish cooling on a wire rack.

Note: Don’t forget these muffins freeze well, so go ahead and double the recipe. It makes a great breakfast on a rushed morning. Simply microwave a frozen muffin for about 1 minute and you have a warm sausage and cheese muffin.
