Peanut Butter Cookies

I am going to tell you a little story behind these cookies that may make me look a little crazy.  It starts back almost seven years ago, yes seven years.  Let me first tell you that I have three kids all born in different hospitals.  People often ask which was my favorite hospital and why.  Well, hands down I always say the second.  But now this is the crazy part.  It is because it had the BEST Peanut Butter Cookies.  I mean. seriously the best, like I was a little obsessed with them.  I am not even sure how I got one in the first place, because I am the first to admit Peanut Butter Cookies were never my first choice in a cookie.  I am thinking my mom might have picked me up a couple of different ones, unsure of what I would want.  Well, it was love at first bite.  I am not even exaggerating when I say I was obsessed.  I ordered one with every meal (yes, even breakfast) and I would frequently ask either my husband or my mom to walk down to the cafeteria to get me one or a few randomly during my stay.

So, this little cookie has been an obsession for almost seven years now. I have made so many different variations trying to replicate this one cookie and have failed over and over again.  Each time getting a little closer, but still not what I was looking for.  Well, today I am here to tell you that I don’t think I can get any closer than this recipe here.  They are soft and chewy with just the right amount of peanut butter flavor.  So, if like me you say that Peanut Butter Cookies are not your first choice in cookie, you might want to try these before locking in that final answer.  Yes, other Peanut Butter Cookies are still not my first choice of cookie, but if they are these particular cookies I will go for them every time.  {I may or may not have made them five times in the last month or so.}

Peanut Butte Cookies {The Best}

Ingredients:

1 1/4 cups butter, room temperature
1/4 cup shortening
1 cup peanut butter
1/4 cup honey
1 cup sugar
1 cup brown sugar
2 eggs
1 tsp. vanilla
2 1/2 cups flour
1 tsp. baking powder
1/2 tsp. baking soda
1/2 tsp. salt
10.5 ounce bag Reese’s Pieces Candy {totally optional, it is heavily debated at my house whether these cookies are better with or without the candy in them. I usually do some with and some without, so everyone is happy.}

Directions:

Preheat oven to 350.  Combine the flower, baking powder, baking soda and salt and set aside.

In the bowl of an electric mixer with the paddle attachment, cream together the butter, shortening, peanut butter, honey and sugars until light and fluffy.  Add the vanilla and eggs, beating well after each addition.  Slowly add the dry ingredients, mixing on low until all incorporated.  Add the Reese’s Pieces, if using.

I made each of my cookies using 2 inch cookie scoop, or about 2 tablespoons of cookie dough.  Place cookies on an ungreased cookie tray 2 inches apart.  I can only fit 8 at a time on each tray.  Bake cookies 10-11 minutes. Do NOT overbake.  Cookies will be soft and doughy, still pale in color, but just beginning to show golden brown around the edges.  Cookies will set and be perfectly soft and chewy, I promise.

Allow cookies to remain on tray for about 10 minutes before transferring to a baking rack to cool completely.  Allow cookies to completely cool before eating.  {Good Luck!}
