No-Bake Peanut Butter Chocolate Chip Granola Bars


Whenever I buy the box of granola bars with mixed flavors, I can guarantee which will be gone first – it is always the peanut butter.  But for some unknown reason, it seems hard to find the box of just peanut butter – according to my house, that should be the most-stocked kind they have . . .

When I came across a recipe for no-baked chewy chocolate chip granola bars, I decided why not make them myself?  No bake means easy, plus then we could have all the peanut butter we wanted.  The added bonus:  just compare the ingredients below to the list of 50+ ingredients on the store-bought box.

This recipe makes a 13×9 pan, plenty for your kids and all the neighborhood kids that show up in the summer.  If you don’t feel like sharing – you can cut the recipe in half and use an 8×8 pan.

 

 

No-Bake Peanut Butter Chocolate Chip Granola Bars

Ingredients

4 cups quick-cook oats (not rolled oats)

2 cups crispy rice cereal

2 tablespoons butter

1/2 cup honey

2/3 cup brown sugar

1/2 cup creamy peanut butter

1 teaspoon vanilla

3/4 cup peanut butter chips

1/3 cup mini chocolate chips

Directions

Line a 13×9 pan with parchment paper allowing it to hang over the edge of the pan for easy removal and cutting.  Or spray your pan with cooking spray.

Mix oats and rice cereal in a large bowl.  Set aside.

Melt butter, honey and brown sugar together over medium high heat until it comes to a bubble. Reduce the heat and add peanut butter.  Cook another 2 minutes or until peanut butter is completely melted. Add vanilla and stir.  Slowly pour over dry ingredients and mix well.  Add your peanut butter chips and sir them in.  {Note, the peanut butter chips will mostly melt.}

Spread the granola mixture into prepared pan and press down to compact it into the pan – you need to make sure they will stick together.

Sprinkle with mini chocolate chips and press down lightly.  Let cool completely until the chocolate chips are set back up before cutting into bars.  Store in an airtight container at room temperature.
