Peppermint Tea Cakes

I could write a post a mile long all about how much I love anything peppermint at Christmas time, but I will save you the boring read and get right to it. These little tea cakes boast just the right amount of peppermint flavor and work perfectly on those goodie plates you still need to take to your neighbors. 😉 {Oh wait, that’s me!}

Peppermint Tea Cakes

Ingredients:

1 cup  butter, softened
1/2 cup powdered sugar
1 teaspoon vanilla
2 1/4 cups flour
1/4 tsp salt
3/4 cup finely chopped nuts
Additional powdered sugar
3/4 cup finely crushed peppermint candies

Directions:

Preheat oven to 400. In a large bowl, beat butter, 1/2 cup powdered sugar and the vanilla with electric mixer at medium speed. Stir in the flour and salt until well combined. Stir in nuts.

Shape dough into 1-inch balls. Place balls on an ungreased cookie sheet about 2 inches apart. Bake 8-9 minutes or until set, but not brown.

In a small bowl, place additional powdered sugar. Immediately remove cookies from cookie sheet; roll in powdered sugar. Wait 10 minutes, then roll in reserved crushed candy. Reroll, if desired. Cool completely on wire rack.
