Banana Oatmeal Cookies

I know, I know it is January and here I am posting a cookie.  However, in my defense these are not true cookies.  Yes, they do contain butter and sugar.  But really these are more like a baked oatmeal in a small cookie form.  I really had planned on posting a great crockpot dinner today, but life happens and well here you go.  I am still up to my eyeballs in Christmas decorations and of course you know I was up late last night to watch the premiere of The Bachelor with some girlfriends.  True priorities, I admit it.  I have no shame in admitting my love of reality TV drama.  (Not to mention, I have still yet to watch the season premiere of Downton Abbey.  (So little time, I tell you. 🙂 )

 

 

Banana Oatmeal Cookies

Ingredients:

3/4 cup butter, room temperature
1 cup sugar
1 egg
1/2 tsp vanilla
1 cup mashed ripe banana (about 2 bananas)
3/4 tsp cinnamon
1/4 tsp ground nutmeg
1 tsp salt
1/2 tsp baking soda
1 1/2 cups flour
1 3/4 cups quick cooking oats
1/2 cup chopped pecans

Directions:

Preheat oven to 375 degrees.

Cream together the butter and sugar until light and fluffy. Add the egg, banana and vanilla. Stir in the cinnamon, nutmeg, salt, baking soda and flour until well incorporated. Mix in the oats and nuts.

Drop spoonfuls of cookie dough onto a greased cookie sheet. Bake 8-9 minutes or until edges turn lightly brown. Cool on wire rack. Store in an airtight container.
