It has been way too long since we have posted a peanut butter and chocolate recipe here on Caramel Potatoes - shame on us, but this one is definitely worth the wait!
Not only do you get a great chocolate cupcake in a cute individual jar - but hidden in the center is a creamy peanut butter filling that tastes just like a Peanut Butter Cup! Don't worry, it's not difficult. The center is just a combination of peanut butter and powdered sugar rolled into a ball and plopped in the center of the cupcake before it bakes.

I absolutely love grilling season - not just because I can usually get my husband to do the cooking {although that is a great perk}, but also because everything tastes so fresh and fabulous hot off the grill.
One of our favorites on the grill is salmon. I created this maple glaze a few weeks ago and we've already made it several times. Talk about fast, easy and delicious!
We like it with roasted red potatoes and green beans, but rice or just a salad is good too.

So this Thai Chop Salad is how we have been eating lately.
