Ginger Lemonade

Hello Summer!  Today marks the first official day of summer and all indicators seem to point to a hot one.  The good news is it is also officially lemonade season!  This Ginger Lemonade has captured my taste buds this year.  The ginger perfectly compliments the lemons for a mild fresh taste that’s not too sweet, yet simply delicious.  Play with the recipe below to find your perfect blend of sweet and tart.  Most important – relax and enjoy the season!

 

Ginger Lemonade

Ingredients

1 1/2 cups sugar

10-12 slices fresh ginger

4 quarts water (divided use)

2 cups fresh squeezed lemon juice

1 lemon for serving, optional

Directions

Bring the sugar, ginger, and 4 cups of water to a boil in a medium sauce pan, stirring occasionally.  Removed from heat and allow to cool at least 10-15 minutes.  Pour the syrup through a strainer into a large pitcher or container.  Discard the ginger.  Stir in the fresh lemon juice.  Add the remaining 4 cups of water.  Note you can add more or less water to taste.  (Remember that ice will dilute the mix.)  Refrigerate at least one hour or overnight to chill.  Serve with fresh lemon slices (optional).

Makes 8-10 servings
