Blackberry Cobbler

There seems to be a lot of  different opinions on what is a “cobbler”.  Some toppings are like a pie crust, some like a biscuit, and others with a mix of oats and nuts like a crisp.  Even though they are all good, this is my personal favorite topping for cobbler.  A light and airy sweet  mix between a scone and a cake {okay, you know it has to be good when there is both heavy cream and buttermilk in the mix}.  Simple and easy, cobbler is always perfect for summer celebrations . . . and just right for enjoying

Blackberry-Peach Buttermilk Cobbler

Fresh fruit cobbler is always a favorite at my house.  In fact I’ve found the perfect way to gather your family.  Once you pop it in the oven, they all start hanging in the kitchen {generally with a spoon in hand!}.  There are also a couple rules at our house about cobbler.  First, they are best eaten warm out of the oven, and second ice cream is a must.

Easy Peach Cobbler

Cobblers rank high in the dessert category at our house – almost as good as pie, yet so much easier to make.  This peach cobbler is so good when it is warm out of the oven with a scoop of ice cream. To keep it super simple, use canned peaches plus a quick and easy light topping that only takes minutes to make.  You probably have everything to make this cobbler now – what are you waiting for?

Blackberry Pie Bars

I remember stopping once on a road trip to pick wild blackberries in the mountains of Washington.  There just isn’t a more perfect treat than fresh fruit off the vine.  We took those berries home to made jams and pies and of course froze some to enjoy later in the winter.
