There is just something about Caramel and Apples that makes me absolutely drool!  I love the combination of apples and caramel.  I also love Bundt Cakes, so  Caramel Apple Bundt Cake is perfect for me!  This long-time family favorite cake is so moist and is incredibly delicious.  It’s filled with fresh apples and spices, but as if that isn’t enough, it’s also topped with a creamy caramel frosting and sprinkled with nuts!

It has been way too long since we have posted a peanut butter and chocolate recipe here on Caramel Potatoes - shame on us, but this one is definitely worth the wait!

Not only do you get a great chocolate cupcake in a cute individual jar - but hidden in the center is a creamy peanut butter filling that tastes just like a Peanut Butter Cup!  Don't worry, it's not difficult.  The center is just a combination of peanut butter and powdered sugar rolled into a ball and plopped  in the center of the cupcake before it bakes.

I know there are a lot of Carrot Salad recipes out there - but here is my favorite way to make it.  This crunchy, sweet salad has all the basics of carrot cake:  toasted pecans, chopped dates, pineapple, coconut, and of course carrots. That's it!  No mayo, no sour cream, no dressing of any kind.  I guess that makes it healthy and good- so good in fact you might even considering skipping the Carrot Cake Cheesecake for an extra serving of the salad if you want to be really good!

The summers here in Colorado, are a funny thing. The weather changes quickly and drastically. We had a really warm day out at the park last week when out of no where it starts raining and drops 20 degrees. After running home and getting the kids settled with a movie, I walked by my front window to see one of the clearest rainbows I have ever seen, I think. The kids were thrilled.
