Crispy Pasta Cake with Red Pepper and Mozzarella Salad

I have a deep love for salads. I love the endless combinations of flavors. This is one that I have loved for a long time.  Adding the crispy pasta to the salad is quite a suprise.  It is just the right combination of flavors and textures to make one amazing salad.  You of course can use any dressing that you like, but I have my favorite for this salad so be sure to check back tomorrow to get that recipe.

Roasted Butternut Squash Harvest Salad

 

When I first saw this salad, I have to admit I wasn’t sure about adding butternut squash; but I tried it and now I’ve found a new salad love . . .  Mmm, toss that butternut squash in olive oil, honey, then roast it until it’s gold brown, and it is amazing- it works perfectly in the salad {or it is a delicious side dish on it’s own}.  Now combine it with cranberries, toasted pecans, goat cheese – and yes, bacon – and you got an amazing salad!

Roasted Pepper Pasta Salad


I don’t know about you, but I’m ready for this summer heat to be over; unfortunately I don’t think that is going to happen soon {big sigh}.  When it’s this hot we love keeping things simple for dinner.  This pasta salad is cool and light- combining roasted peppers {yum} and fresh mozzarella {another yum} and pine nuts {one of our favorites}.  Throw in some fresh basil from the garden and you get a delicious combination.  It’s simple to make and goes with most any grilled meat.  If you want to make it even more simple,  add some sliced sausage and

Crunchy Roasted Chickpeas


I am always on the lookout for inexpensive and healthy snack options for my kids and myself.  I came across these roasted chickpeas in a Martha Stewart Magazine and thought we would give them a try.  My kids were a little stand-offish at first, but they became good friends after a simple introduction.  My kids think they are eating nuts for lack of a better way to explain it.

Chickpeas are very inexpensive and are full of protein, fiber and iron.  But they make an irresistible snack.  Try them sprinkled in a salad.

Mac and Cheese with Roasted Chicken, Goat Cheese, and Rosemary



Mmmm. . .  a “grown-up” version of mac and cheese?  When I saw the ingredients in the recipe, I knew my family would love it.  Rich and creamy cheese sauce with rosemary over chicken and pasta – it’s a delicious combination!

Even though the name of this recipe is quite long, it’s really a very fast and easy meal- perfect for busy nights or summer nights when you don’t want to turn on your oven.   Pair your pasta with a salad and bread sticks and enjoy your dinner!
