Carrot Sheet Cake


Can you believe that Easter is on Sunday?  What are you serving for dinner?  And don’t forget dessert!  Carrot Cake and Easter seem to go together, don’t you think?  And you know I love to simplify my deserts every now and then to feed a crowd {Sugar Cookie Bars and Blonde Texas Sheet Cake with Caramel Pecan Frosting, just to name a couple.} 

This is a moist and delicious cake that will please a crowd.  And of course, it is topped with Cream Cheese Frosting.  If you are looking for a simple way to dress up a slice of cake then grab a bag of M&Ms and pick out the orange and green.  Place 6 orange and 2 green M&Ms in the shape of a carrot and Voila!!!  So cute and simple.  Or another idea would be to sprinkle some walnuts on the top of the cake {If your feeling a little nutty ;)}  Either way or nothing at all this cake is perfect for Easter Dessert.

Carrot Sheet Cake

Ingredients:

4 eggs
1 cup oil
1 1/2 cups sugar
1/2 cup brown sugar
2 cups flour
2 teaspoons baking soda
1/4 teaspoon baking powder
2 teaspoons cinnamon
1/2 teaspoon salt
1 teaspoon vanilla
3 cups carrots
2/3 cup walnut, haves and pieces

Cream Cheese Frosting

1 80z package cream cheese, softened
1/2 cup butter, softened
1 teaspoon vanilla
4 cups powdered sugar
1 teaspoon milk

Directions:

Preheat oven to 350.  Grease a large sheet pan.  (Mine measures 18x13x1)

In a medium bowl sift together the flour, baking soda, baking powder, cinnamon and salt.  Set aside.

Using the paddle attachment of a stand mixer, mix the eggs, oil and sugars on medium speed until well emulsified and light in color, about 1 minute.  Turn off mixer and scrape down sides.

Slowly add the dry ingredients on low.  Mix just until incorporated.  Add the carrots and walnuts.  Pour into prepared pan.

Bake for 30-35 minutes.  Cake is down when toothpick comes out clean of center.  Cool completely before frosting.

To make the frosting: cream the cream cheese, butter and vanilla together.  Slowly add powdered sugar.  Mix on high 1-2 minutes until light and creamy.  Add the milk and beat for another minute.  {This is enough frosting to frost your sheet cake.}
