Corn Bread Cake

I saw this floating around pinterest lately and it intrigued me.  It did not disappoint!  This cornbread is so moist and sweet with more of a cake like texture than traditional cornbread.  And with the cooler weather upon us there are going to be plenty of opportunities to serve cornbread with all those soups and chilis we are going to be eating.

Corn Bread Cake

Ingredients:

1 yellow cake mix
2 boxes Jiffy corn bread mix
eggs, according to package directions
milk, according to package directions
water, according to package directions
oil, according to package directions

Directions:

Preheat oven to 350 and grease a 9×13 pan.

In a large mixing bowl combine the 3 boxed mixes together and add the other ingredients according to each box.   Bake 30 minutes or until a toothpick inserted in the center comes out clean.

  1. Oh yum! I haven’t had Jiffy cornbread mix in forever. Jim always makes the cornbread with corn meal. I might have to get a box of Jiffy the next time I am at the store. Ok, a couple boxes. Muffins and cake!!!!! Thanks for sharing.

  2. Thank you for sharing this! My husband and I can’t agree on a good cornbread recipe, so I’m crossing fingers that this will be the one =)
