Overnight Slow Cooker Apple Cinnamon Oatmeal

Is it just me or do the mornings before school seem so rushed? I have kids that wake up super early; we are talking before 6am on some days, but always by 6:30. Except for the one day a week that they go to piano lessons before school. Every single day of the week, including the weekends, my kids are up too early except the one day that they need to be. My two older kids attend piano lessons before school once a week and every week it is the one day that I have to actually wake them up. CRAZY!

No matter what time we get up and how much time we think we have, it seems my kids are always scrambling to get ready and eat a nutritious breakfast. This oatmeal is perfect! My kids can grab a bowl and a scoop or two of this oatmeal and they get a great tasting and healthy breakfast. It is a win-win. It’s so nice when I go to bed at night to know that breakfast is already taken care of for the next morning.

Overnight Slow Cooker Apple Cinnamon Oatmeal

Ingredients:

2 apples, peeled, cored and diced
2/3-1 cup brown sugar, depending how sweet you like your oatmeal
1-2 tsp. ground cinnamon
dash of ground nutmeg
2 cups oats, old-fashioned or steel-cut oats work best, but even instant oats will work
4 cups water

Directions:

In your crock pot, combine the apples, brown sugar, cinnamon and nutmeg. Add the oats on top and pour water over the oats, do not stir. Cook on low 8-10 hours. (Know your crock pot settings. Adjust cooking time accordingly.)

In the morning, stir oatmeal to combine and serve with an additional sprinkle of cinnamon and/or brown sugar if desired and a little milk.
